CSV carries no formatting, formulas or multiple sheets, and Excel often misreads its dates and encodings. XLSB opens quickly in Excel even when the workbook is large. CSV is at home in moving tabular data between systems; XLSB is the usual choice for very large workbooks that need to open quickly.
Numbers and true/false in the cells become real spreadsheet values rather than text, and the data lands on one sheet named Sheet1. The workbook is written in Excel's compact binary layout, which Excel opens quickly but many other tools cannot read.
CSV is a table written as text: one row per line, values separated by commas. Every spreadsheet and database can import and export it, but it holds one sheet only and no formatting, formulas or data types.

The values are kept. Anything XLSB has no way to express, such as formatting, formulas or nesting, is simplified or left out.
