Phones and address books export contacts as vCard, a format you cannot sort or edit in a spreadsheet. A CSV puts names, phone numbers, email addresses and companies into columns that Excel and Google Sheets open, which is the usual way to clean up a contact list or move it into a CRM.
vCard versions 2.1, 3.0 and 4.0 are all read, including quoted-printable text and per-line character sets. Each contact becomes one row, with extra email addresses and phone numbers in numbered columns. Files up to 100 MB are accepted.
A VCF file holds one or more contact cards: name, phone numbers, email addresses, addresses and optionally a photo. It is the standard way to export and import contacts. Versions 2.1, 3.0 and 4.0 exist and differ in details such as character encoding.

The values are kept. Anything CSV has no way to express, such as formatting, formulas or nesting, is simplified or left out.

Yes. A file can be up to 100 MB; a larger one is refused with a message. Beyond that the limit is your device's memory, since nothing is uploaded; a computer copes with large files better than a phone.
