XLSB is a binary format that many tools and scripts cannot read. ODS is an open standard that LibreOffice uses natively. XLSB is at home in very large workbooks that need to open quickly; ODS is the usual choice for spreadsheets in open-source office suites.
Formulas come across as the values they last calculated, and formatting such as colours and column widths is not carried over. Every sheet is kept, under its own name. ODS holds at most 1,048,576 rows and 16,384 columns per sheet.
XLSB stores the same workbook as XLSX but in binary records instead of XML, which makes the file smaller and faster to open and save. It is used for huge models and for workbooks that mix a lot of formulas. Few tools outside Office read it.
