XAR opens mainly on a Mac, and Windows and Linux need extra tools. ZIP opens on every computer and phone without extra software. XAR is at home in mac installer packages; ZIP is the usual choice for sending several files as one.
A password-protected archive is refused, since its contents cannot be read without the password. XAR files are read, not installed or mounted: every file inside is unpacked and repacked into the ZIP, so nothing of the system image or installer is run.
XAR is an archive format with an XML table of contents followed by compressed file data, which lets a tool read the listing without scanning the whole file. macOS uses it for flat installer packages (.pkg) and it was used for Safari extensions.

Yes. An archive can be up to 500 MB, unpack to at most 1 GB and hold up to 50,000 files; beyond those limits the page says so. Beyond that the limit is your device's memory, since nothing is uploaded; a computer copes with large files better than a phone.
