PLIST is an Apple format that other systems rarely produce, and the binary form cannot be read in a text editor. YAML is easier for people to read and edit than JSON and allows comments. PLIST is at home in settings of macOS and iOS apps; YAML is the usual choice for configuration files written by people.
XML property lists are read; dates stay ISO date strings and binary data stays base64 text. A binary property list is refused, and the message gives the plutil command that converts it to XML first.
A property list stores dictionaries, arrays, strings, numbers, dates and raw data. macOS and iOS use it for app settings, Info.plist files in every app bundle, and preferences. It comes in an XML form that any editor can read and a compact binary form.
