AIFF files are very large and are not played by many phones or websites. MP3 plays on every phone, computer, car stereo and speaker. AIFF is at home in audio production on the Mac; MP3 is the usual choice for music and podcasts that must play anywhere. MP3 is lossy, so keep the AIFF original if you may need full quality later.
The defaults suit most files. Under Options you can choose the bitrate and trim the start and end.
This pair uses the compatibility engine, ffmpeg built for the browser, because AIFF is not handled by the browser's built-in codecs. It is a one-off download of about 10 MB that the browser keeps, it is slower than the built-in codecs, and it takes files up to 1 GB. MP3 is written at 192 kbps unless you choose another bitrate.

MP3 is a lossy format, so a small amount of detail is traded for a smaller file. At the default setting the difference is hard to notice. You can choose the bitrate under Options.
