Choosing a 3d model format
3D model files describe a shape as a mesh of triangles, sometimes with colours, materials and a scene around it. STL is what 3D printers take and stores shape only; OBJ is the long-standing interchange format; PLY keeps a colour on every vertex, as scanners produce; and glTF and its single-file form GLB are the compact modern formats for the web, AR and game engines. Moving between them keeps the shape exactly; whatever the target cannot store, such as colour in STL, is dropped.

Which 3D format should I use?
STL for 3D printing, GLB for the web, AR and game engines, OBJ when you need the broadest compatibility with modelling programs, and PLY for scans that carry colour on each vertex.
Why did my model lose its colours or textures?
STL stores shape only, so converting to it drops colour. Textures are not carried between formats here; vertex colours are kept where the target supports them (OBJ, PLY and glTF).
